German chocolate cupcakes
While I have always loved German Chocolate cake, I was especially excited to try making German Chocolate cupcakes. I was afraid that the classic feel of a German Chocolate cake might be lost in a cupcake form but I was thrilled to find out that it not only tasted as good as the classic cake, it was just as appealing to the eye.
This recipe has three parts to it; the chocolate cake, the chocolate glaze and the German Chocolate frosting. All three parts of this cake are delicious on their own and can be combined with almost anything to create a new dessert. Ingredients for the chocolate cake:
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon sea salt
2 sticks of butter, room temperature
1 1/4 cup of light brown sugar
1/2 cup sugar
4 eggs
1 1/2 cups buttermilk
1/3 semisweet chocolate
2 teaspoons pure vanilla extract
Directions:
In a medium bowl, sift flour, cocoa, baking soda and salt and set aside. In a mixer, cream the butter and sugars. Slowly add one egg at a time and mix until it is well blended. Warm the semisweet chocolate over the stove or in the microwave and allow it to cool slightly. Add the melted chocolate and vanilla to the liquid mixture and continue to mix until well blended. On low speed, add the buttermilk and dry ingredients to the liquid mixture, alternating between the two, until completely mixed in.
You should end up with a fluffy, light cake batter that is ready to be portioned into lined cupcake baking pans.
I was able to make almost 30 cupcakes with this recipe. Bake cupcakes at 350 degrees for approximately 25 minutes. Be sure to not over bake them as you want them to be moist. Insert a toothpick into the center of a cupcake and if it comes out clean, they are ready to be taken out. Allow cupcakes to completely cool on a baking rack.
While your cupcakes are cooling, this is a good time to make your chocolate glaze and your German Chocolate frosting.
Once your cupcakes are cool and your chocolate glaze has cooled slightly, carefully dip each cupcake into the glaze. Allow the cupcakes to stand at room temperature for the glaze to set.
Once the chocolate glaze has set, take a heaped spoonful of the German Chocolate frosting and place it on top of each cupcake, forming it how you like.
Arrange the cupcakes on a serving dish and they are ready to eat!
